What You Didn't Know About Chocolate: The Cool Hidden Facts & Stories Behind Your Favorite Food
On Sunday at 12:00PM join chocolate sommelier Estelle Tracy for an exploration of the history, geography, science, culture, and industry of chocolate. Peppered with engaging stories, the presentation will give you a deeper appreciation of chocolate and a collection of fun facts to impress your friends!
Think Outside the Bar: Tz'utujil (Mayan) Chocolate Making in Guatemala
On Saturday at 2:00PM join Nico Silverman for an inside look at Mayan cacao culture! He will lead us through a virtual tour of Guatemala, sharing from his 12 years of collaboration with Tz'utujil cacao and fiber artisans. Learn more about cacao farming, chocolate making, and more! Bring a curious palate and questions!
Don't Yum My Yuck!
On Sunday at 2:00PM join chocolate sommelier Estelle Tracy as she dives into the world of taste. Gain insights into the reasons why your "yum" can be someone else's "yuck". You'll discover how smells, sights, and sounds impact our perception of taste along with the relationship between storytelling and memories with taste. Each attendee will receive 2 chocolate samples, along with a paper strip containing phenylthiocarbamide (PTC) to help identify super-tasters, individuals with heightened sensitivity to bitter compounds.
Meet the Speakers
Kathy Stroh is a registered dietitian who’s extensively researched the health benefits of chocolate. She’s a seasoned speaker who’s spoken at NIH as well as at the DC Chocolate Festival. Kathy is a Registered/Licensed Dietitian and and Certified Diabetes Educator. She works in a large Primary Care Practice, in Delaware. She enjoys highlighting the varied qualities of cacao and chocolate.
Nicholas (Nico) Silverman’s journey to chocolate began accidentally in 2012. While researching artisans in Guatemala as a then-employee of Etsy.com, he met the founder of Diego’s Chocolate (Booth #400). Since then, the two have endeavored to bring handmade ‘GuateMayan’ chocolate to hungry consumers in North America. Besides working in the technology sector, Nico led various projects in affordable housing and urban agriculture development for non profit organizations. When not working you’re likely to find him on a hiking trail, playing various stringed instruments, cooking, or reading.
Estelle Tracy is an award-winning food writer and chocolate sommelier based in Kennett Square. Originally from France, she discovered the bean-to-bar movement in 2015 when she challenged herself to review 37 chocolate bars in honor of her 37th birthday that Halloween. Since then, she has shared her love for chocolate through hundreds of tastings worldwide. She’s the author of a food survival guide for French people in the US and the founder of 37 Chocolates, a chocolate education company. Find out more at 37chocolates.com
